if i receive a message encrypted to me, bob and alice, why does
"--list-only" show that the message is encrypted to bob and alice, but not
me?

the output here is the same, whether or not the message is encrypted to
me: if it's encrypted to me, bob and alice; or only encrypted to bob
and alice; it will only show that it's encrypted to bob and alice.
