--default-key name Use name as default user ID for signatures. If this is not used the default user ID is the first user ID found in the secret keyring.

For encryption only you never need a passphrase, because you don't need your secret key but only the receivers public key for encryption. The passphrase is only needed to decrypt and/or to sign messsages/keys.
