The first will use the first usable valid key found in your key ring containing
your sending email address as part of an UID.

The second uses the indicated key.  Select this option if you have multiple keys
which may match and you wish to only use a particular key; OR, if you did not
enter an email address or this email address has not yet been added to the key
you wish to use.
