Which key is used to sign key?

I didn't check with --quick-sign-key specifically, but usually I do the
signing key selection via --sign-with KEYID/NAME, for example:

  gpg2 --sign-with flapflap --sign-key muri

But strangely enough, I did not find --sign-with in the man page (Debian
stable) or gpg2 --help...
