Yes, we have an API for that (`gnutls_global_set_time_function`), so that should be possible.

Meanwhile I've opened an MR incorporating Andreas' change. It's also tempting to generate certs at run time as Tuomo suggests, though I worry that it may increase CI running time (that should work well in this specific test, as we generate certs on SC anyway).
