Sorry for the lack of support for `--{enable,disable}-gtk-doc`, it was my first release and I did not have gtk-doc installed. Currently there has been a change that makes the bootstrap fail whenever gtk-doc is not installed, therefore this will no longer be an issue in 3.7.5 release. I am closing this issue.
