Since GnuTLS is only used in the server side (Squid), you would need to enable debugging on the server. Perhaps you could run a Squid instance in [foreground](https://scubarda.com/2020/03/23/configure-squid-proxy-for-ssl-tls-inspection-https-interception/) with GnuTLS debug [option](https://www.gnutls.org/manual/html_node/Debugging-and-auditing.html#Debugging-and-auditing) enabled?
