I'd ask myself if it wouldn't be easier to set up a VPN (IP/Sec with
S/WAN or something like that) and have the network take care of
encryption.

Of course mail wouldn't be encrypted on the servers, but only on the
wire, but if you're mostly concerned about somebody sniffing on the
network this solution seems easier.
