How I usually do it:

cat clearfile | gpg -ear recipient_email at domain.com > clearfile.gpg

the -r in the parameters list means "recipent" and it's the email
address that resolves the name.

If you often send to the same recipient (e.g. yourself) you can create a
~ gnupg/gnupg.conf file (or "options" in pre-1.2.4) with the line

default-recipient email at domain.com
